    Fishtown’s beloved Rocket Cat Cafe is not actually returning

    Fishtown residents and business owners Shannon Leocata Figueras and Justice Figueras will sell no wine before its time. This much is clear because LeoFigs, their winery and restaurant, has been “coming soon” for months at Frankford and Susquehanna Avenues.

    Recently, the LeoFigs signs came down and a new one appeared in the window, showing a drawing of a cat wearing a space helmet while watching a rocket circling the moon.

    Could it be? the neighbors buzzed. Might Rocket Cat Cafe, the scruffy but beloved coffee shop/zine shop/hangout that closed five years ago nearby, be revived in the space?

    Nope. The sign was a ruse, Justice Figueras said. When anything opens in Fishtown, “everybody’s like, ‘Is it going to be another Rocket Cat?’ So we thought it was a little bit cheeky — maybe get us some awareness before we posted some jobs.”

    LeoFigs — whose opening is sorta-kinda-definitely set for mid-December, probably — is now hiring for all positions in the front and back of the house, including executive chef.

    The Rocket Cat sign, coming down soon, will also serve as LeoFigs’ first real post on its newly scrubbed Instagram account. “I basically erased all of our old [posts] because we went through a rebrand,” he said. “It was good timing for the Rocket Cat situation.” The original logo, designed by their children, has been subbed, as well.

    “We definitely put the neighborhood in a tizzy,” said Shannon Figueras, an executive with Bacardi. “We didn’t realize everybody would get so excited, but we feel like we probably should say something.”

    The tactic worked perhaps too well.

    “We really can’t walk out on the sidewalk without somebody being like, ‘What’s going on?’” said Justice Figueras, a Jersey Shore-bred wine-business lifer, adding: “We didn’t think we could really offend anybody.”

    Since the spring, months after it was first mentioned, LeoFigs’ concept has evolved substantially. The couple expanded their winemaking operation, including a recent trip to the Finger Lakes, where they purchased about three tons of grapes.

    Up front, the design has shifted from a simple host counter to a full working counter that will become a showpiece for making fresh pasta. They said they’re doubling down on scratch pastas, breads, and even some pastries.

    Despite the café buzz the Rocket Cat ruse generated, LeoFigs will not be a morning destination. “I don’t think there’s a crowd for lunch — there are a million cafés and coffee shops over here,” Justice Figueras said.

    Instead, the plan is to open in the late afternoon and focus on dinner service, with “medium” plates inspired by a trip from Barcelona to Sicily. “We almost want to be more of a food hall for wine,” he said.

    At the new Huda Burger in Fishtown, the secret ingredient is the buns

    One of the keys to the sandwiches at Huda — chef Yehuda Sichel’s acclaimed shop in Rittenhouse — is the cloudlike, house-baked milk bread.

    At Huda Burger — opening Nov. 19 near Suraya and Palmer Park in Fishtown — Sichel is also building his burgers and chicken sandwiches on the luxurious, mildly sweet buns inspired by Japanese shokupan.

    In fact, he built the entire place around them. “This kitchen is like half bakery, half prep kitchen just for the buns,” Sichel said. The buns at Huda Burger will be seeded, unlike those at the original shop, which serves one of The Inquirer’s favorite smash burgers — the Mott, topped with buttermilk ranch, pickled peppers, pepper Jack brie, and hot honey.

    Sichel is banking on the buns to separate him from the other burger makers. (New York’s 7th Street Burger has a location opening this winter down the street, further adding to the pressure.)

    “Being in a saturated market really forces you to get better, and there’s nothing I like more than some competition,” said Sichel. Besides the bread, everything else is being made in-house, including pickles and sauces, and every item is prepared to order — even the chicken is butchered in the back.

    Besides three kinds of crispy chicken sandwiches (coated in rice flour, cornstarch, Wondra flour, and what Sichel describes as “a whole bunch of spices”), Huda Burger’s menu includes a rotating line of five or six smash burgers. There’s a classic cheeseburger, a create-your-own option, a vegetarian burger, a pastrami fried onion burger (a cross between a pastrami burger and an Oklahoma-style smash burger), and a bread-free cheeseburger salad. The menu also includes curly fries, pickles, and shakes made with soft serve from 1-900-Ice-Cream.

    His partner is Dan Berkowitz, the chief executive and co-founder of 100x Hospitality, an event production company specializing in immersive and travel experiences.

    The space, designed by Lance Saunders, includes a half dozen indoor counter seats and a few outdoor tables in season.

    Sichel, who grew up in Elkins Park, started in the restaurant business at age 15, making sandwiches at a kosher deli in Baltimore. After culinary school in Israel, he moved home to work for chefs Georges Perrier at Brasserie Perrier and Daniel Stern at Rae, followed by a stint with chef Neal Fraser at Grace in Los Angeles.

    In 2010, he joined Steven Cook and Michael Solomonov at Zahav. He rose through the ranks — from line cook to pastry to sous chef — and played a major role in the opening of Citron & Rose (2012) in Lower Merion and Abe Fisher (2014) in Rittenhouse. Abe Fisher was named a Best New Restaurant by Travel & Leisure, and Sichel was named to Zagat’s 30 Under 30 Rock Stars Redefining the Industry. He left CookNSolo in 2020, opening Huda at 32 S. 18th St., that summer amid the pandemic.

    A popular cheesesteak name turns up at a landmark location in South Jersey, and Facebook gets spicy

    Max’s Seafood Cafe, which brought lofty dining ambitions to down-to-earth Gloucester City, has changed hands after a quarter-century.

    The new owners — Mike and Barb Williams, who previously ran the three Pudge’s sandwich shops still operating in the Pennsylvania suburbs, and entrepreneur Chris Widell — plan to open Tuesday as Pudge’s Pub. It will sport a far more accessible menu of steaks, hoagies, and bar food, as well as some of Max’s bestsellers, such as steamed clams, clams casino, and mussels in three sauces. A former Max’s chef is on board, as is the former bar manager.

    But while change is inevitable, especially in the restaurant world, last week’s announcement failed to impress the Facebook crowd. No sooner had the partners swapped out Max’s logo for a jaunty sketch of a mustachioed Pudge on the profile page than the comments flew on the page of the news site 42 Freeway, based on its article about the transaction:

    “Oh, my God! They’re not using ‘Max’s’ anymore!” “I’m guessing a joke?” “Change an iconic name?” “Such a classy-looking restaurant for a cartoon character logo and basically takeout food menu.” “Is this AI pulling [a] prank?”

    The partners expressed frustration as moderator Mark Matthews tried to reason with the commenters. Marilyn Johnson, moderator of the South Jersey Food Scene page, did the same on her post.

    “Give us a chance,” an exasperated Mike Williams told The Inquirer on Friday. Economic reality drove the decision to rebrand as Pudge’s. Max’s hasn’t made a profit in at least three years and foot traffic was low, Williams said.

    Many commenters conceded that they hadn’t visited Max’s in a long time. “I don’t want to say we’re saving it, but we want to resurrect a place where all walks of life can come and have fun,” Williams said.

    They are keeping the neon Max’s Cafe sign, which has cast a glow over the intersection of Hudson and Burlington Streets for decades. They applied a fresh coat of paint to the classic barroom, and are keeping the ornate wood-and-mirror bar, circa 1912, as it was.

    The draft-beer list, which included high-brow specialties like Chimay, has been simplified to more standard offerings like Miller Lite, Stella, and Yards. (The fancier beers will be available in bottles.) Williams said they plan to host special events in the parking lot and are adding four TVs inside.

    Mike Williams said he had a butcher prepare a custom cut of beef for the cheesesteaks. They’ll use rolls from Liscio’s, also a South Jersey business, since their previous supplier, Conshohocken Italian Bakery, closed last year.

    Even the bar’s new focus on cheesesteaks sparked outrage from commenters who lamented that greater Gloucester was on the brink of Whiz overload. Two other shops are due to open soon just down the street: a barroom from Lillo’s (of Hainesport fame) at the former Thomas Murphy’s Pub, and Irishtown Steaks, from a former head cook at the well-regarded Donkey’s Place a few minutes away in Camden. In nearby West Collingswood Heights, Danny DiGiampietro of Angelo’s Pizzeria is planning to open a new eatery.

    Pudge’s and Max’s histories

    It’s not as if the Williamses are new to the game. The Pudge’s project is a return to their family’s roots. Pudge’s traces its history to Frank’s, the hoagie shop that a 21-year-old Frank Carbone opened at Wister Street and Chew Avenue in Germantown, near what was then La Salle College, after he got out of the service in the late 1950s.

    Carbone renamed it Pudge’s — his childhood nickname — when he moved it to Whitpain Shopping Center in Blue Bell, Montgomery County, in 1972. His daughter, Barbara, and her husband, Mike Williams, took over Pudge’s after Carbone’s death in 2000. The Williamses opened locations in the Lansdale and Pottstown areas before selling their last location in October 2024; all three operate under the new owners, and Williams said he has rights to the name.

    The Gloucester City bar opened in 1890 as a shoe store and became Leisinger’s Saloon in 1912, when German immigrant Joseph Fred Leisinger installed the bar. After Leisinger’s death in 1937, another German immigrant, Max Waterstradt, bought the business and named it Max’s Cafe, also a neighborhood taproom. By the late 1970s, Max’s had evolved into Max’s Seafood Cafe, known for simply prepared seafood. Time and deferred maintenance caught up with the building, and Max’s went dark in 1998.

    In 2001, Tom Monahan — a partner in the nearby Chubby’s restaurant — bought Max’s, restored it, and reopened it with a premium menu whose entrees in its later years were priced in the high $30s. Monahan, who operated Max’s until last week’s sale, did not reply to a message seeking clarity on his restaurant’s gift certificates. Mike Williams and Widell said they would not honor them at Pudge’s.

    By the weekend, as the Facebook crowd had moved on to a new tempest (was a new bank planned for Washington Township really necessary?), the partners were applying their final touches to the pub.

    Asked how Pudge’s would set itself apart from other local hangouts, Mike Williams replied that an owner — he, his wife, or son Preston — would be on premises from opening till closing daily: “That’s the only way for quality control, and just being friendly — that is an art that is lost these days.”

    When Keith Critchley and JT O’Brien were looking to buy a restaurant last year, they toured the dining room and kitchen of Georgio’s in downtown Downingtown, which Georgio Malle was selling after more than 30 years.

    “Keith and I went to lunch and I said, ‘There’s no way we’re buying this for what he wants. It’s not that big,’” O’Brien said. They went back to negotiate, he said, Malle told them flatly, “My price is my price.”

    It quickly became evident that Critchley and O’Brien had not seen the upstairs of the rambling building on Lancaster Avenue. “When I saw the upstairs, I thought, ‘Now I can start thinking of different ideas and concepts that we can do,’” O’Brien said.

    They seem to be throwing everything at the Borough, which began opening in phases in recent weeks. There is a 35-seat sports bar/restaurant with 40 TVs, 20 taps, and a full cocktail menu on the ground floor, connected to a large patio through garage doors. Upstairs, there’s a 20-seat bar, a six-seat sushi bar, and a venue hosting live music. Programming such as open-mic nights, karaoke, trivia nights, and comedy shows will ramp up in November. Big brunches — think mimosa towers and full entertainment — will start after Thanksgiving.

    Five years ago during the pandemic, the Swarthmore-born Akai noticed that the successful restaurants were offering pizza — “and not because they were making great pizza.”

    Akai began teaching himself, using YouTube and setting up an oven in his backyard. By day, Akai, 33, works as an installer for Toast, the restaurant point-of-sale company. He quickly became popular among his neighbors. “It brings people together,” he said. “You can go anywhere in the world and make pizza and probably make a friend.”

    A lifelong vegan, Akai wanted to make pizza he could eat himself, and the challenge of making tasty nondairy pizza became motivation. When he learned that Critchley and O’Brien were opening, he offered to get them started. (Georgio’s had a fairly extensive pizza kitchen, including a large mixer.)

    Akai’s pies are beautifully puffy-crusted, sort of neo-Neapolitan, with zero flop and a light char. The sliced garlic gave a subtle roast to a cheeseless tomato pie that he made for me off the menu. His Forager ($23), with basil pesto and three kinds of mushrooms, was balanced and did not sink under the mozzarella. There’s also a plain cheese ($18), pepperoni ($21), and a margherita ($19).

    As they did with the other restaurant amenities, Critchley and O’Brien created a something-for-everyone menu, served anywhere in the space. There are pork belly burnt ends ($18); Bavarian pretzel ($13); meat-and-cheese board ($32); crispy chicken sandwich ($16) with a sesame soy glaze and kimchi on a glazed doughnut bun; and a lamb gyro ($19) with sumac red onion and tzatziki on a house-made pita. Rolls make up the sushi menu, and the few entrees include miso striped bass ($34), seared scallops ($36), cauliflower steak ($25), and steak frites ($36).

    O’Brien started in hospitality 25 years ago bartending at Reed’s in Blue Bell and counts six years at Seacrets in Ocean City, Md., and 11 years with P.J. Whelihan’s in Downingtown and Montgomeryville in his work history. Critchley, who has no hospitality background, recently sold his business, Lang’s Lawn Care in Malvern, but runs it under the new owners.

    Downingtown has always had a solid restaurant scene, with La Sponda, Myrtos, and Jads nearby and R Five Wines and East Branch Brewing Co. across the street from the Borough, and Dressler Estate serving ciders nearby. The other newcomer is mother., with a creative menu of tacos plus beer, wine, and cocktails.

    Chomp for CHOP enlists some of Philly’s top restaurants to help fund antihunger programs

    Dozens of Philadelphia-area restaurants have signed on to participate in CHOMP for CHOP, a weeklong fundraiser to benefit Children’s Hospital of Philadelphia’s Food Pharmacy program, which provides food access and nutrition resources for families in need.

    The initiative, created by CHOP’s food pharmacy manager, Abbe Stern, aims to raise $50,000 for CHOP’s programs addressing food insecurity between Nov. 10 and 16. Participating restaurants will raise funds in various ways, such as selling specific dishes, offering special menus, donating a percentage of sales, and allowing customers to contribute on their tabs.

    The restaurants include some of the city’s most recognizable names, such as Zahav, Scampi, Amá, Little Water, Yanaga Kappo Izakaya, a.kitchen, Federal Donuts, Riverwards Produce, Santucci’s Original Square Pizza, El Chingón, Forsythia, Barbuzzo, Bar Hygge, El Merkury, Huda, Irwin’s, Kismet Bagels, the Boozy Mutt, Lark, Khyber Pass Pub, Wilder, Bridget Foy’s, Cry Baby Pasta, Sabrina’s, Middle Child Clubhouse, 48th Street Grille, Vientiane Bistro, Fishtown Pasta, and Cavanaugh’s Rittenhouse. More restaurants are signing up daily, Stern said.

    Stern said she got the idea after hearing about a restaurant week fundraiser in the suburbs. “I had this idea: ‘Can’t we just do something like that in Philly?’” said Stern, who previously worked for the Rittenhouse Hotel and also for the app Too Good to Go, which addresses food waste. “I knew there was so much motivation within the Philly restaurant scene to help the community and feed people.”

    Stern reached out to public relations executive Peter Breslow, who with his colleague Mike Prince agreed to help recruit restaurants. “We had a really quick call and brainstormed how to engage the restaurant scene to raise funds,” Stern said. “From my experience, I wanted restaurants to create something that would work for their businesses and encourage patrons to buy, while helping us build food access for the community.”

    Stern said the effort is timely, as families face mounting hardship amid impending cuts to SNAP benefits, with more patients and providers reaching out for help. “Families are scared, struggling, and can’t find support anywhere else,” she said.

    Through CHOMP for CHOP, she hopes to connect the city’s hospitality community with families in crisis. “These businesses are excited to say they’re part of the solution — part of a big initiative to feed our neighbors,” Stern said.

    This forthcoming Center City restaurant is built around home cooks’ recipes — and reality TV will decide what’s on the menu

    Ed Baumstein is betting that Philadelphia’s next great restaurant won’t come from a professional chef — rather, from the kitchens of everyday Philadelphians.

    Baumstein, a longtime business executive, is behind the ambitious Recipe Philly, a 175-seat restaurant, opening next spring at Broad and Arch Streets. In a novel hook, the menu will exclusively feature recipes created by the winners of a competition, and the creative process will be filmed as a docuseries of the same name.

    Baumstein said those personal stories will differentiate Recipe Philly from other food-competition shows. “We’re capturing the story behind the dish and the people,” he said in a phone chat last week. “There have been several applicants already that give me goosebumps — the love that goes into the dishes and the people they cook for. It’s almost romantic.”

    How Recipe Philly will work

    The competition will begin Nov. 8 with a casting call and registration at the Convention Center’s Broad Street atrium; pre-registration is open at recipephilly.castingcrane.com. With cameras rolling, contestants will fill out recipe cards and share the stories behind their dishes, not the dishes themselves.

    Josh Randall, the warmup host for American Idol, will emcee that day’s filming. Production will continue as producers whittle the entries down to about 100 contestants, and then to about 35 finalists.

    Contestants will compete across eight categories: appetizers, soups and salads, poultry, pasta, seafood, meat entrees, desserts, and an “other” category for creative outliers. Film crews will tape at contestants’ houses and on the site of the new restaurant as the competition continues. The recipes will be judged — by “chefs, food influencers, and community voices,” according to the show’s press release — based on taste, creativity, and story.

    Each winner will receive $1,000, with additional category prizes of $2,000, and their names and photos will appear on the restaurant’s menu next to their dishes. They’ll also eat for free at the restaurant as long as their recipe remains featured.

    “Here’s the beauty of this,” Baumstein said. “We have no idea what we’re going to serve yet. It’s part of the intrigue of the show.”

    The docuseries will consist of eight to 10 episodes, beginning with the November casting call and the early stages of restaurant construction. Later episodes will focus on the competition, the judging, and the restaurant’s transformation from an empty space to a fully realized dining room designed by Nelson, an international design and architecture firm. (Joe Scarpone, himself a former chef-restaurateur, and Alex Snyder, both of MPN Realty, represented Baumstein in the lease at the One City building. Stefanie Gabel and Jacob Cooper of MSC represented the landlord, an affiliate of Alterra Property Group.)

    Baumstein said he expects to secure a network or streaming partner in early 2026. He also wants to expand the idea to other cities. “Every restaurant will have a completely different menu — indigenous to its home city,” he said.

    From potluck to prime time

    Baumstein, 70, a graduate of Olney High School and Temple University, is an unabashed Philadelphia booster. “This city’s vibrant, especially when it comes to food,” he said in an interview last week. “It’s the best-kept secret in the country — 25% cheaper than New York, 25% cheaper than D.C., and just full of family and community.”

    Baumstein’s inspiration for Recipe Philly traces back to his days running SolomonEdwards, the Philadelphia-based consulting firm he founded in 1999, expanded internationally, and sold three years ago.

    During the 2008 recession, Baumstein’s chief financial officer proposed canceling the company’s annual holiday parties. Baumstein refused. Instead, he invited employees to his suburban Philadelphia home for a potluck dinner. “I was just blown away by the enthusiasm that our colleagues brought to the Christmas party,” Baumstein said. “They were super-excited about making their dishes. They watched the buffet table to see who was eating their dishes. We gave out little prizes, and just getting that three minutes of fame was unbelievable.”

    SolomonEdwards compiled the recipes into a cookbook, which Baumstein kept as a reminder of how food brings people together. “What I love more than food is the inspiration that people give you,” he said. “In a world full of negativity, I wanted to create something that highlights the positive.”

    The team behind the kitchen

    Baumstein’s Homebred Hospitality owns the Recipe Philly brand. His restaurant partner is chef Andy Revella, who has handled menu development and operations for restaurants including Bennigan’s, Steak & Ale, and Rainforest Cafe and is a former director of food and beverage for Harrah’s Casino. Jarrett O’Hara, formerly culinary director of Federal Donuts, is vice president of culinary operations.

    Baumstein said the total budget was $4 million — comparable to similar restaurants.

    Asked if he had ever thought of opening a restaurant before, Baumstein replied: “No, and thank God, and I’m not going to be the one responsible for the daily operations. That’s Andy’s job. I’ve grown some big companies, and I think probably what my skill set is hiring really smart people that are talented and are able to get the team all rowing together in the same direction.”

    A South Street wine bar is revived in Center City

    Three and a half years after fire shut down the quirky Wine Dive on South Street West, Chris Fetfatzes, Heather Annechiarico, and Susan Freeman are reviving it in a former nail salon in Rittenhouse.

    Its soft opening at 1534 Sansom St. — next door to Marathon Grill and on the same block as such nightlife destinations as Ladder 15, Oscar’s Tavern, and Shay’s Steaks & More — will be 4 p.m. Oct. 31 with limited hours and an abbreviated menu. Grand opening is set for Nov. 6. Hours will be 4 p.m. to 2 a.m. with the kitchen open until 1 a.m., with a late-night menu offered after 10 p.m.

    This incarnation of WineDive, in a smaller space, is a bar only; the bottle shop section at its opening in 2020 did not make it to Center City — neither did the space between “Wine” and “Dive.”

    Fetfatzes describes WineDive as “Old Hollywood meets Atlantic City,” drawing retro inspiration from the early casino days, specifically the cheesiness of the Playboy Hotel. The interior, seating about 30 people at tables and 14 at the bar, blends amber glass blocks, dark wood paneling, tufted seating, and low lighting.

    The menu includes roast beef sandwiches inspired by South Philly luncheonette Shank’s & Evelyn’s, with horseradish and provolone on seeded kaiser rolls; chicken cutlets; loaded baked potatoes; shrimp Lejon (the bacon-wrapped shrimp dish made famous by Clam Tavern in Delaware County); wedge salads with creamy Russian-ranch dressing; and brûléed pimento cheese dip with Cheez-Its. Desserts include rotating baked cookies, ice cream sandwiches, and soft-serve “ice cream bumps” in flavors such as brown butter and warmed apple pie.

    Wine director Tim Fordham has assembled a list of 20 wines by the glass list that will change six times a year, with selections including grower Champagne, Alpine whites, skin-contact orange wines, and classics from Burgundy, Barolo, and Bordeaux. Freeman said the list also would include wines from women-owned wineries and female winemakers.

    WineDive’s previous location, as seen in January 2020, was 1506 South St. It was next to what was then the Cambridge and is now Sonny’s Cocktail Joint.

    Cocktails lean toward nostalgia, Fetfatzes said, with interpretations of drinks such as the Rusty Nail, Surfer on Acid, Pickle Martini, Mind Eraser, and Tequila Sunrise.

    WineDive’s signature $5 house wines will return, and weekly themed programming will include Microdose Mondays (small pours of rare and allocated bottles), T for Tuesdays (a late-night happy hour focused on wines and spirits beginning with T, such as tempranillo, txakoli, and tequila), Bottomless Baked Potato Wednesdays, “Naturdays” (highlighting natural wines and pét-nats), and industry brunch Sundays, a 10 p.m. late-night brunch aimed at hospitality workers and night owls.

    The owners, branding themselves Happy Monday Hospitality, also have Grace & Proper, Sonny’s Cocktail Joint, and Quick Sip Delivery, an on-demand wine delivery service.

    Upstairs from WineDive, they’re working on Liquorette, a European-style cocktail bar to open in early 2026. They also intend to reopen the original South Street WineDive, at 1506 South St., in the future.

    In East Asian folklore, the Jade Rabbit is a celestial figure known for compassion and hospitality. When a hungry goddess tested the kindness of animals, the rabbit offered itself as food. Moved by this selfless act, she granted it immortality, sending it to live on the moon.

    There, the Jade Rabbit eternally mixes the elixirs of life for the gods — a symbol of generosity, sacrifice, and eternal service.

    At Jade Rabbit, the cocktail bar that opened this week beneath Maison Lotus in Wayne, siblings Pearl and Paul Somboonsong are mixing their own elixirs — if not for the gods, then for, well, Main Liners.

    In March, the Somboonsongs opened Maison Lotus, an upscale Vietnamese restaurant and all-day cafe at 175 Lancaster Ave., the former site of Margaret Kuo.

    As they planned the two-story restaurant, they decided that the basement would be an ideal spot for a speakeasy-style bar as a passion project, alongside a banquet room where they’d host private events and mah-jongg games.

    Pearl Somboonsong grew up on the Main Line, where her parents, Win and Sudita Somboonsong, created a string of restaurants, including Mikado Thai Pepper, Teikoku, Azie, and Blue Elephant.

    After college, she lived in New York and Chicago, “and there was always a speakeasy scene,” she said. Philadelphia has one, too. But not so much on the Main Line, as she discovered when she moved back to join her brother in Win Hospitality, the family business.

    There are stylish bars, she said, but “I was asking, ‘Why is there not really a place where I can have that same experience where the cocktails are really the focus?”

    Of course, Jade Rabbit is licensed, unlike a true speakeasy. But it has the characteristic unmarked door leading down from Maison Lotus as well as a low-lit, low-key vibe for its eight bar seats plus 18 more at tables. Opening night was fully booked, and there are 30 on the waiting list for tonight, Pearl Somboonsong said. It’s only open Thursday and Friday for now; more days may be added if there is demand.

    Bartender Curtis Daulerio and Win Hospitality beverage director Katrin Kanikkeberg set up the bar, whose cocktail menu is Vietnamese-inspired. For a drink called the Circle Jawn, they use a Porthole Infuser, a circular contraption invented for the Aviary, a seminal speakeasy-style bar in Chicago.

    The Circle Jawn is meant to resemble a bowl of pho, so Daulerio loads the infuser with vermicelli, roasted carrots, basil, and spices such as star anise, cinnamon, cloves, cardamom, and coriander seeds. Then he pours Diplomatico rum, Pedro Ximenez sherry, and black walnut bitters into the porthole. The drink ($39 for two), which is poured atop a large ice cube, picks up new flavors and colors as it steeps.

    Like many new bars, Jade Rabbit also has a FlavourBlaster, the device that creates oversize bubbles and smoke on top of a drink. “Of course, we play with fire and smoke and stuff, but I didn’t want it all to be gimmicky,” Pearl Somboonsong said. “At the end of the day, it has to be about class. The goal is an amazing, well-balanced cocktail.”

    Jade Rabbit offers three options for reservations: There’s a $30 per-person deposit for a bar seat; the customer orders à la carte drinks and food, and the deposit is applied to the final bill. In the dining seats, there’s a $145 five-course food and cocktail pairing menu with hamachi, flower dumplings, Chilean sea bass, A5 Wagyu steak, and crystal dumplings filled with guava and strawberries — all unique to the lounge. The third option is a three-course cocktail progression, which covers any three cocktails for $65.

    À la carte food includes bites such as Bangkok toast (brown sugar butter and bourbon creme anglaise atop milk bread), umami popcorn, and Japanese street corn, plus larger plates including the steak and sea bass.

    The new pizzerias you should know about

    Cuzzy’s Ice Cream Parlor in Queen Village, which closed abruptly a year and a half ago, reopened last weekend at 762 S. Fourth St., two blocks from the previous shop, doling out such flavors as brown butter pecan, vanilla beans, chocolate cake, cinnamon apple streusel, pistachio biscotti, maple walnut pie, coffee, and grape sorbet.     What’s tasty out there?     Briefly noted

    The Buttery’s Malvern flagship (233 E. King St.) will reopen Saturday after a redesign, an expansion from 18 seats to 62, and a new menu including pizza, tartines, sandwiches, and bowls. The first 100 customers Saturday will receive a free sable cookie with purchase.

    Pica’s Restaurant, the Upper Darby landmark, will close its dining room after service Sunday, as it readies for its move to Broomall. The restaurant will remain open for takeout for the foreseeable future.

    Philly Cider Week begins at 3 p.m. Sunday at the Headhouse shambles (Second and Lombard Streets) following Headhouse Farmers Market sales. Vendors will vend till 7 p.m.

    Ange Branca, owner of South Philly’s Kampar, took to Instagram earlier this week with an update on repairs to the restaurant, idled since February by a fire. Water damage was extensive, she reports. Kampar will set up an ikan bakar (grilled-fish) market pop-up at Jet Wine Bar (1525 South St.) from 4-9 p.m. Sunday. Two ways to go: Pick your whole fish and sambal from the outdoor stand, where it will be priced by weight and prepared (walk-ins OK), or dine inside for dinners at 5:30 and 7:30 p.m. ($75pp) featuring five Malaysian fish dishes.     Provenance (408 S. Second St.) will host an Oct. 29 collaboration dinner honoring the late chef Jim Burke and benefiting Twist Out Cancer, for which Burke’s wife and business partner, Kristina Benene Burke, works. Provenance chef-owner (and Burke disciple) Nicholas Bazik will be joined by chefs including Ron Mckinlay (formerly Canoe, Toronto), Alex Kemp (My Loup), Eli Collins (a. Kitchen), Evan Snyder (Emmett), Tim Dearing (Ule), Greg Heitzig (the Fountain Inn; former CDC of Pineapple & Pearls, Washington), as well as Provenance pastry chef Abby Dahan. It’s $395 per person (plus tax/gratuity/beverages) with all profits going to the foundation. Seatings in the wine cellar are available at 7 p.m., and at 5 and 8:30 p.m. upstairs.

    Honeysuckle’s first wine-centered event will be a ticketed five-course dinner with André Mack and Maison Noire Wines on Oct. 30. It’s $175 per person, plus tax, tip, and fees). Tickets via OpenTable.

    Opera Philadelphia will join Jean-Georges Philadelphia for a collaboration of music and food — a tasting menu interspersed with live performances — on Nov. 20. Details are here.

    What’s going on with High Note Caffe at 13th and Tasker? From the outside, it looks like it’s been ready to open for at least a few years now. — Caitlin D.

    Owner Frank “Franco” Borda has taken his sweet time (four years!) converting his long-running restaurant into a supper club. It’ll be offering sporadic ticketed jazz and opera performances to start out. The first two dates, in early November, are sold out, but the next is Dec. 12. Here’s the calendar.
